I'm looking for the same thing but can't find UK based insurance policies which offer documentation explicitly stating COVID-19 coverage. Seems like the COVID coverage letter is not a requirement anymore, but I'm not yet convinced. I would have used the Thai based policies, but they exclude pre-existing medical conditions. I didn't realize they also exclude car and motorcycle accidents!
