  1. Anyone know how I can get products from the farm to get a biological certification? I am thinking about things like rice, fruit and vegtable. there must be a company that gives out these certificats. Organic Certification might be a better word for it. found this website in Australia http://www.bfa.com.au/IndustryResources/OrganicCertification.aspx just wondering if there is a same kind of company here in thailand.

    Try any of these. Make sure you read the bottom few paragraphs.

    "Q: Would someone please tell me what kinds of wood are suitable for grilling?

    A: The traditional woods for smoking are HICKORY, PECAN and OAK. Here is a list of woods suitable for smoking:

    ACACIA - these trees are in the same family as mesquite. When burned in a smoker, acacia has a flavor similar to mesquite but not quite as heavy. A very hot burning wood.

    ALDER - Very delicate with a hint of sweetness. Good with fish, pork, poultry, and light-meat game birds.

    ALMOND - A sweet smoke flavor, light ash. Good with all meats.

    APPLE - Very mild with a subtle fruity flavor, slightly sweet. Good with poultry (turns skin dark brown) and pork.

    ASH - Fast burner, light but distinctive flavor. Good with fish and red meats.

    BIRCH - Medium-hard wood with a flavor similar to maple. Good with pork and poultry.

    CHERRY - Mild and fruity. Good with poultry, pork and beef. Some List members say the cherry wood is the best wood for smoking. Wood from chokecherry trees may produce a bitter flavor.

    COTTONWOOD - It is a softer wood than alder and very subtle in flavor. Use it for fuel but use some chunks of other woods (hickory, oak, pecan) for more flavor. Don't use green cottonwood for smoking.

    CRABAPPLE - Similar to apple wood.

    GRAPEVINES - Tart. Provides a lot of smoke. Rich and fruity. Good with poultry, red meats, game and lamb.

    HICKORY - Most commonly used wood for smoking--the King of smoking woods. Sweet to strong, heavy bacon flavor. Good with pork, ham and beef.

    LILAC - Very light, subtle with a hint of floral. Good with seafood and lamb.

    MAPLE - Smoky, mellow and slightly sweet. Good with pork, poultry, cheese, and small game birds.

    MESQUITE - Strong earthy flavor. Good with beef, fish, chicken, and game. One of the hottest burning.

    MULBERRY - The smell is sweet and reminds one of apple.

    OAK - Heavy smoke flavor--the Queen of smoking wood. RED OAK is good on ribs, WHITE OAK makes the best coals for longer burning. All oak varieties reported as suitable for smoking. Good with red meat, pork, fish and heavy game.

    ORANGE, LEMON and GRAPEFRUIT - Produces a nice mild smoky flavor. Excellent with beef, pork, fish and poultry.

    PEAR - A nice subtle smoke flavor. Much like apple. Excellent with chicken and pork.

    PECAN - Sweet and mild with a flavor similar to hickory. Tasty with a subtle character. Good with poultry, beef, pork and cheese. Pecan is an all-around superior smoking wood.

    SWEET FRUIT WOODS - APRICOT, PLUM, PEACH, NECTARINE - Great on most white or pink meats, including chicken, turkey, pork and fish. The flavor is milder and sweeter than hickory.

    WALNUT - ENGLISH and BLACK - Very heavy smoke flavor, usually mixed with lighter woods like almond, pear or apple. Can be bitter if used alone. Good with red meats and game.

    BBQ List members and other internet sources report that wood from the following trees is suitable for smoking: AVOCADO, BAY, CARROTWOOD, KIAWE, MADRONE, MANZANITA, GUAVA, OLIVE, BEECH, BUTTERNUT, FIG, GUM, CHESTNUT, HACKBERRY, PIMIENTO, PERSIMMON, and WILLOW. The ornamental varieties of fruit trees (i.e. pear, cherry, apple, etc.) are also suitable for smoking.

    Q: Are there any types of wood I should not use for grilling?

    A: Yes. There are many types of wood that are unsuitable or even poisonous when used for grilling. Don't use any wood from conifer trees, such as PINE, FIR, SPRUCE, REDWOOD, CEDAR, CYPRESS, etc.

    There are many trees and shrubs in this world that contain chemicals toxic to humans--toxins that can even survive the burning process. Remember, you are going to eat the meat that you grill and the smoke particles and chemicals from the wood and what may be on or in the wood are going to get on and in the meat. Use only wood for grilling that you are sure of.

    It is beyond the scope of this FAQ to provide a complete listing woods that are unsuitable for smoking. If you have some wood and do not know what it is, DO NOT USE IT FOR GRILLING FOOD. Burn it in your fireplace but not your smoker.

    BBQ List members report that ELM and EUCALYPTUS wood is unsuitable for smoking, as is the wood from SASSAFRAS, SYCAMORE and LIQUID AMBER trees.

    Here are some more woods that you should not to use for smoking:

    Never use lumber scraps, either new or used. First, you cannot know for sure what kind of wood it is; second, the wood may have been chemically treated; third, you have no idea where the wood may have been or how it was used. For all you know, that free oak planking could have been used in a sewage treatment plant.

    Never use any wood that has been painted or stained. Paint and stains can impart a bitter taste to the meat and old paint often contains lead.

    Do not use wood scraps from a furniture manufacturer as this wood is often chemically treated.

    Never use wood from old pallets. Many pallets are treated with chemicals that can be hazardous to your health and the pallet may have been used to carry chemicals or poison.

    Avoid old wood that is covered with mold and fungus that can impart a bad taste to your meat. If you have some good cherry wood (or other good smoking wood) that is old and has a fungus growth and you want to use it, pre-burn it down to coals before you put it into your smoker.

    Grilling over a wood fire is more challenging than grilling over charcoal. Wood burns hotter than most charcoal and as a consequence, burns faster. Wood also stays in the 'hot coals' stage for a shorter period of time than charcoal"

    Good info here thanks for posting... I am leaning towards coconut shells and maybe mix in some lemongrass at the start.

  3. I have followed this thread since the start (about 2 months)... you all make good points..

    It would have been interesting to have followed this conversation from the Thai sellers point.. The seller probably dos not think more than 5 minutes about it. The Seller thinks I borrow x amount and want to buy a new car Y so I need x+y. usually this amount far exceeds the actual worth of the land which should be determined by the factors mentioned in this thread.

    In the end I think there should be some kind of merger between the Issan method of valuating land and the Farang. Not everything makes sense to us farang. I am not saying go ahead and spend crazy amount of money but I would not make a big deal about 5 to 10k overpricing according to our views. When I (wife) purchased land 7 years ago I was undergoing the same dilemma as described here but now the land has more than doubled in value.. at the same time my home back in Amsterdam has not increased in value.

    I (wife) am looking to purchase more land... and don't think it's a bad long term investment. The issue for me is not should I have land in my asset portfolio but what percentage and that all depends on the level of risk one is wanting to take. I consider land (bricks and stones) a saver investment than the stock market.

  4. Interesting how much worm cast do you plough-in per rai?

    IA: Mechanised harvesting is clearly taking over from traditional hand harvesting. What was also very noticeable this year in my area, is how few farmers were transplanting their rice. Most of them were only broadcasting it.

    Our rice is nearly ready for harvest too. We shall hand cut because, according to She Who Must Be Obeyed, that way we can leave it to dry on the ground, then thresh it and bag the rice dry. That way we can store it until the price goes up a bit and for our own use throughout the year. If it is cut using a mechanical harvester it is bagged wet and either has to be sold to the mill immediately at whatever low price they are offering, which they further lower by knocking off 10% for water content or the bags have to be emptied and the rice spread out somewhere where there is sufficient space to dry, sometimes the local temple grounds.

    We also replanted our rice to get a better crop. Needless to say we use no chemicals on the rice and we have been ploughing-in wormcast on our paddy fields for four years now, consequently our crop is significantly better than surrounding fields (better to eat too without chemicals). We also spray with worm tea to discourage pests and improve growth.

  5. I also like to drop in at the Coffee Corner when I am around. I think it is a clean well run place. There is a nice farang menu as well as thai food. Ray is a friendly individual who is knowledgeable about the area and always ready to point you in the right direction. I would also like to nominate the rest room to be one of the best in Issan. I challenge anyone to find a better one.

  7. I am going through the same process.. I am married in the Netherlands to a Thai national. My wife called the Thai embassy here in Holland and came back with really strange response.

    The Thai embassy said that if we register our Dutch marriage in Thailand that my wife will not be able to own land in Thailand…

    I believe this to be true if my wife would change nationality but that is not the case she will remain Thai and therefore should be able to own land in Thailand…

    What about all the farang in Thailand that are married their wife’s own land…

  11. I have decided to get a bus from Bangkok to Prakhon Chai, can anyone tell me the bus number I require as I need to check timetables

    The busses go every hour and my previous previous price quoted was wrong the price should be about 350BHT not more. Night bus VIP can be 500BHT but they are hard to find. I can't really tell you which buss it is as my wife usually takes care of these things.

    Hey buddy what is your problem? I don't understand your reference regarding Mr. Burns. I was providing information that I believed to be helpful to the poster asking the question.
