Rice Pudding

Just fancied making a Rice Pudding today,

used Waitrose Arborio rice,you must use

a short grain rice.

I started by boiling the rice in water,to give

it a start,after the water had boiled down

add milk and warm up,transfer to oven 

proof pot with lid,add sugar stir in,put some

butter on top,grate on nutmeg,put in oven

with top on,leave to cook,take lid off when

the milk has gone down,to brown the top.

 

I was a bit short of sugar,so added some

strawberry jam on top,a la school dinners

of years ago, some people stir an egg in

before cooking.

A lot depends on where here actually is.

 

I live in rural Khampaeng Phet which is 65 km from KPP city and about half way between BKK and CM and I would probably have to go Phitsanulok (180 km each way) nad 3 hours travelling each way.

 

Now it there were some of these there as well it might be worth a trip.

This is my rice pudding recipe. Not classic, but delicious.

 

Coconut Rice Pudding

1 ½ cups jasmine rice (Cooked)

2 cups coconut milk

1/3rd cup sugar

¼ tsp salt

1 beaten egg

½ tsp vanilla extract

1 tbsp butter

 

Put rice into a saucepan. Add 1 ½ cups of milk.

Add sugar and salt. Stir for 10-15 mins on a medium heat, until it starts to thicken.

Slowly add the beaten egg, and stir.

Add remaining 1/2 cup of milk. Stir for another 2 mins.

Take off the heat and add vanilla and butter. Stir until butter melts. Then serve.
