The FDA requires eggs to be stored below 7C . I think as long as they are fully cooked, you won't get salmonella. In the US, they wash and sanitize the eggs. You have to refrigerate eggs in the USA because the eggs are washed which removes a protective layer of the egg that keeps bacteria out. In Europe, the protective layer is left on, so refrigeration is not needed. In Thailand the eggs are not washed (illegal in the UK), so, they don't need to go in the fridge. They are out in the tropical heat all that time but they are still fresh enough to hatch into baby chicks. If they can make a baby chook they surely must be fine to eat.
