Judge
Is it the cornmeal with the rough texture of a real taco or Fritos corn chips, or is it the equivalent of white flour with all the good bits removed? I've seen people - Art Cafe in Chiang Mai - try to make Mexican food with that corn meal with no roughage and the texture and taste are useless! j634
Thanks Bambina will check out Foodland. Judge not sure which would be better for what I am making. I am only making fried cornbread, have not advanced to the taco or chips yet. Thanks, j634
tutsiwarrior
Is it the cornmeal with the rough texture of a real taco or Fritos corn chips, or is it the equivalent of white flour with all the good bits removed? I've seen people - Art Cafe in Chiang Mai - try to make Mexican food with that corn meal with no roughage and the texture and taste are useless! ground maize is just one ingredient in 'masa' as the mixture for making tortillas is known in Mexico. The secret ingredient is powdered lime(stone) which can only be found in mexican style 'masa mix'. I tried making tortillas out of 'surplus commodity' corn meal once while on acid...what a mess... haha
I few years ago, I wanted to buy cornmeal like they have in the states. the only place I was able to find it was at the "villa markets". it was in small yellow colored boxes. can't remember the price.
