Do you mean , you will use "tom yum paste" for cooking curry?

As I know , you can use "tom yum paste" for cooking

-Tom yum ( with shrimp/seafood/chicken/mushroom..ect)

-Tom Kha Gai (chicken soup with coconut milk) (or other meat ,mushroom)

anyway .. dont put lemon juice in the boiling soup ..it will make a better taste... Just add the lemon juice when the soup is in bowl before eating

Okay, here's what I did.

Ingredients:

Coconut milk

Onion

Garlic

Carrot

Savoy cabbage

Cauliflower

Baby sweetcorn

Corriander

Fish sauce

Lime juice

Salmon cut into chunks

What I did:

I chopped and lightly fried Onion and Garlic

I added the Tom Yam paste

Then the coconut milk

I chopped and added the carrot

Then the cauliflower

Then the baby sweet

Now the salmon as you don't want it overcooked

Finely chopped and added the Savoy cabbage

And finaly the corriander, fish sauce and lime juice

I also cracked in some black pepper

Served it on a bed of rice, with a nice glass of white wine. I cooked enough for 4. It was delicious!!!

Mae Ploy Paste is alright if you're outside of THailand, otherwise not that spectacular. - The best are made by your favorite vendor in the local markets. - It's overall taste is a little strong on salt and galangal for me. Most tom yam pastes in THailand have alot more use of hom daeng and namtaan (shallots n palm sugar respectively), making it much more tasty and delicate as an addition to a soup.

When I use the mae ploy stuff though, for a Thai take on things, I like to marinate some chicken or pork with a rub of it, some fish sauce, and some sugar. This makes for some fine grilled meat the next day !

The Thais don't do it this way, it's a fusion thing admittedly.
