Bread making fundamentals

I had a look at the Makro mixers today. They had the 6000B one, and they had another one that was smaller for about 2750B. I was quite tempted by the cheaper one as I dont need the full size of the larger one (I normally make one 400g loaf at a time, though I could be tempted to make double and freeze half) and the construction and design of both was very similar indeed.
 
They also had several much larger "pro" mixers with no price stickers. Some of those were huge so might be of interest to anyone who wants to do commercial baking. "Made in Pattaya" according to the label, which left me a little nonplussed.

If you have enough space in your kitchen or home, sometimes you can find these professional machines at kaidee for around 10,000 Baht.
There are also some second hand shops specialising in food production tools. Just search on here or the web to get the address.
Mind next week is Thaifex exhibition and some the foreign exhibitors sell their showcased machines for a very cheap price because they don't want to take them back

They may send it by Thai post but I have no idea of the charges for 10 or 20kg weight.

 

I could always ask my mate who lives in KPP and goes to Pit'lok often or perhaps get to his place early and bum a lift with him.

 

TBH it is too much hassle really.

The problem with the smaller ones is that they only have small motors which is a problem when you are making bread. The motors tend to overheat and smoke and eventually burn out and then need replacing.

 

The smaller "professional" mixers in Makro start around 10,xxx baht up to the largest at about 22,xxx baht.

I would expect even the small ones to deal with a 400g loaf. It's the same amount that I make with my current stand mixer from BigC and that doesnt overheat or struggle. In fact the only thing wrong with the current mixer is that it mixes rather than kneads.

I had a cheese and onion roll and a cold roast pork and mustard roll for lunch.

 

The rolls were great.

I think I saw spelt flour at Tops and Villa. So you might try Tops online shopping or delivery

They only works in Bkk areas and Pataya.... I live in Chanthaburi.

Anybody knows where can I buy Spelt bread and flour online in Thailand?

Just out of curiosity, why you want to have spelt flour?
I tried it once and could not taste much difference to regular wheat flour.
Instead I switched to bake with whole-wheat and rye flour sometimes. Small brown bags from tops. Imported from Australia. If I can remember about 55 Baht.

I bought 1 kg spelt bread 100/baht in Rim ping, When I was living in Chiang Mai. Now, living in Chantha, is difficult to find already made. So I mix it with other flours and I get good bread in my owen.

Is my favorite taste, is the bread that I have always consumed living in Spain.
It's feel very good to the digestive sistem.

Just 2 days ago just removed by surgery my gallbladder, now I am in hospital, thinking how to take back this tasty and digestive bread.

Sadly like you I live in rural Thailand and my nearest BigC and Marko are 65Km away in Khampaeng Phet.

 

Have a look at this link and go to food products the download their list.

 

But look very carefully at the small figures next to the flours and then find out how much shipping costs.

Thanks for the link, can see some interesting products. But You just awakened the dragon of the lust seeing all those cakes, sweets and chocolates, which I will never be able to eat again! I Must to conform for a piece of fresh homemade bread, even if I have to pay the price. I Just order 5 kg of spelt organic at 460 baht/kg. And will try to mix and manage it well.

I got close to ordering earlier on this year and actually made a shopping list of the stuff I would have liked from them. Then I found that there is a minimum order and I would have ended up spending far more than I wanted so I cancelled my order.

 

I suggest that you decide what you want and what you really need and email them for their price and go from there.

Bump.

 

Does anyone know of a place that I can order whole wheat and rye flour online and that will send it to me?

 

I only need about 5 kg of each at a time but I just looked again at Choko Schmidt and for free delivery I would need to order 100kg at a time with is a bit of an overkill.

 

My alternative is to do my next mothly bulk shop at Tops in Phitsanulok which is 180km and a 2 1/2 hour drive away, each way.
