What kind of wood did you use to smoke the eel?

I would think the Thai beef would smoke up pretty good...

  I smoke all my seafood and chicken in a wok with a lid on it . Make a spice mix of sugar , uncooked rice , and tea and some cinnamon and star anise.I then make a teriyaki sauce from ginger , soya sauce , miron, oil and sugar.

how does the smoke enter the wok? :unsure:

Nam , the ingredients go in the bottom of the wok on top of foil.Turn your wok on and put on high heat , till you see everything is smoking .then put in a steamer tray and put protein  on top .turn down to low heat . put lid on ..

I will take pics next time I do it , maybe with salmon in 2 weeks

I done so much cooking the last 7 days , everything from Australia beef steak to lobster and prawns , duck breasts ,scallops, it was so good . The best dish my step son love the most .....was shepherds pie!!!! I use a fatty minced steak , lamb fillets , and lean steak minced .I add Tabasco sauce , herbs , fresh cooked tomatoes , tomato paste . The potatoes are boiled then mashed with cream and butter . I spread the potato mixture on like canyons, so when I put the cheese on you get rivers of melted cheese .

it might be tasty Kevvy but it's not smoking. without the taste of real smoke from charcoal it's like having sex with a rubber doll... in my [not so] humble opinion. :unsure:

Agreed about the smoking. Not tried a rubber doll yet though so will take your word for it.
