I think the live fish beat each other up too bad which (in my opinion) makes them mushy.

When we catch tuna, we bleed and spike them so they’re dead before we drop them in the brine...

went to a road house with the family where they had live farmed freshwater prawns in tanks...sold by the kilo they then prepare them anyway ye like BBQ, tom yum, etc...gotta admit that was some of the best eatin' I've had in a long time...

Cooked lamb sous vide(water bath) last night .Had scallop and cream mousse , with a green pea puree . The green colour was added for presentation .First put the lamb in a vacuum bag and was cooked  for 2 hours and then rolled in plastic and put in the freezer for 30 minutes , crumbed  and deep fried .The flavours were great and the scallop mousse was amazing .

Today dinner at Sizzler. Quite disappointing salad bar. I hope this branch just ran short of supply and these are no permanent changes.
No Cesar salad, no other salad with meat inside (as spicy chicken or the Thai beef salad). No more blue cheese dressing. Green salads only two and one of them had brown cuts.

Next time better check the condition of the salad bar before entering.

I'm glad that there's no sizzler near me so that I'm not tempted to patronize the place...there is a place, however that bills itself as the 'Check Inn 99' presumably after the famous lower Sukh establishment in BKK that closed a couple of years ago and presumably with a similar menu...around the corner from the market, ground floor of a shophouse with only 5 tables or so...always packed out when I pass the place when it's in operation...

had a look at the ingredients and thought 'beans and tomatoes with cinnamon, allspice and cumin with loads of cilantro (fresh coriander), what's that gonna taste like?' and easy to make, I added some fresh finger chiles and used olive oil for the garnish...and I wasn't disappointed as it was delicious, probably even better if I had some nice crusty bread to eat it with...I had a couple of frozen chapattis and they weren't half bad...fresh lemons and cans of canellinni beans available at makro but any white beans would do...

 

might wanna substitute some cans of garbanzos (chick peas) instead and see what ye get...goddam makro can't keep them in stock...

 

stocking the shelves at makro 'sold outta beans again...whaddaya suppose dem falangs use all dem beans fer?' 'dunno but ye gotta remember dey ain't de same as me or you...'...later there was the story of the falang in the street naked and raving that he could no longer renew his long term visa and that the powers that be were gonna kick him out of the country and take away his kitchen for which he swore an everlasting vengeance...

 

 

 

Hi Tuts. Found an Indian stall in BKK last week with red, yellow, split lentils, chickpeas plus all the Indian spices you could wish for. He said he could deliver all items by post. Speaks good(ish) English & Thai. PM me if you want his details. The shop a couple of doors down even had bags of Tetley tea.
